Biopreservation of food

Bioconservation of foods involves the use of natural microflora and their antimicrobial compounds to increase food shelf life and improve safety. Generally, lactic acid bacteria are used as bioconservation agents because they are recognized as safe and are strongly present in our diet.

Application process

A simple, natural and innovative solution

Depending on your food to protect, the synthesized or purified bacteriocin can be applied to the food. It is also possible to add the bacteriocin-producing strain directly to the food in order to have a continuous production of bacteriocins throughout the life of the food.

The formulation of the bioconservation agent will thus depend on the characteristics of your food, pathogens that may be found, and the compatibility of the bacteriocin-producing strain with the food.

Intégration et application

As demonstrated in the attached video, the bioconservation agent containing the bacteriocin or bacteriocin-producing strain will be sprayed directly onto the surface of the food prior to final packaging. Our vaporizer installs on any production line and vaporizes only in the presence of food on the processing line. It is also possible to install soaking baths as needed. This step normally takes place just before the final packaging in order to inhibit pathogens that could integrate the food during handling.

In order to offer customized solutions adapted to the real needs of food transformers, Innodal Laboratory proposes to start with a pilot project.

1. Needs evaluation

A visit to the factory makes it possible to understand the quality control system already in place. An analysis of the microbiological problems of the processor is then carried out in order to determine the harmful pathogens that can be found in the products marketed.

2. Adapted solution development

Depending on the problem, the appropriate solution is formulated and tested on the transformer products. These tests make it possible to confirm the effectiveness of the solution, but also the respect of the quality standards of the transformer.

3. Implementation

Innodal accompanies the processor in the process of implantation instead of transformation of the developed solutions. This support ensures that the solution remains fully effective on site and that its use meets the transformer’s standards.
