How does Inneo control Listeria monocytogenes?

Inneo leverages pediocin, a peptide composed of natural amino acids. This protein recognizes a receptor on the cell membrane of Listeria monocytogenes, binds to it, and locks it in an open position. This causes the bacteria to empty their contents and die through lysis.

Because it targets the Listeria directly, Inneo’s effectiveness is largely independent of the food matrix. It does not inhibit the growth of beneficial microorganisms or interfere with the growth or acidification curve of lactic ferments, making it an ideal solution for fermented products such as dry sausages, cheeses, and sauerkraut.
Within 24 to 48 hours of application, the protein naturally breaks down into free amino acids through the action of food proteases, meaning no trace of Inneo remains in the final product consumed. As a result, our product qualifies as a food processing aid and doesn’t need to be included in the ingredient list.

What is the recommended dosage?
A single gram of Inneo is sufficient to treat 6,600 kg of food at a concentration of 150 ppb. To simplify its application, we adjust the concentration of each unicadose vials to suit your production needs.
Our Unicadose system provides a single-use 10 ml bottle with concentration levels tailored to your requirements. Each Unicadose can treat 1 to 2,200 lbs of food, ensuring a precise and efficient solution for your operations.
Do I have to cover the entire surface of the product?

Yes. Inneo must come into direct contact with the bacteria to effectively destroy Listeria through receptor binding. Complete surface coverage is essential to ensure maximum effectiveness.

How long does the anti-Listeria protection last?

Inneo naturally degrades on the food surface within 24 to 48 hours. For optimal protection, it should be applied shortly before packaging. This timing minimizes contamination and recontamination risks while protecting the product during packaging.

Does Inneo affect the taste, colour, or composition of food?

No. Inneo is a highly effective agent that does not alter the sensory qualities of food. Just 1 gram of Inneo can treat up to 6.6 tons of food at a concentration of 150 parts per billion (ppb). As a result, there is no impact on the organoleptic properties of your products.

Is the solution compatible with all foods?

Yes. Inneo has been tested on various food matrices, and no incompatibilities have been identified. This versatile solution can be applied through spraying, soaking, or direct incorporation into the matrix.

Are there any limitations to Inneo?

While versatile, Inneo works best under the following conditions:

  • pH range:Between 3 and 8.
  • Water hardness:Up to 400 ppm.
  • Temperature tolerance:Effective when frozen or exposed to brief temperatures up to 120°C.

Performance may decrease if these parameters are exceeded. The product has a one-year shelf life under recommended storage conditions.

Can I use Inneo on my equipment and surfaces?
While Inneo is safe for use on equipment, it is specifically designed for direct application on food. For routine plant cleaning, chemical cleaning products are more cost-effective and provide excellent results.
