Molecular structure

Pediocin is composed of 44 natural amino acids. Its mechanism of action is the permeabilization of the bacterial membrane.

Compliance with Health Canada’s standard of less than 100 CFU/g of Listeria monocytogenes for ready-to-eat foods.
